She also encouraged him to explore other cuisines and, when she saw how he loved Asian food, bought him a wok to practice what he learned in the Asian cookbooks he was studying. Starters of umami-packed veggies and meat skewers round out his food options. They combine well for a meal of progressive small plates.

The broth, for example, uses traditional methods that take at least 48 hours to make. Although noodle dishes are the big stars of the menu, there are also several small plates, perfect for sharing. In addition, we offer craft beer, Spanish and American wines, a full bar and a variety of delightful non-alcoholic options.

Fans of sesame or orange chicken will naturally be drawn to the Chicken Karaage ($10). They’ll find it to be beyond the ordinary, with great crunch, tenderness inside, and more complex flavors thanks to the chili glaze made in-house. And generally be curious — about new-to-you sakes, raw bar specials and one confounding dish called Kimchi Bolognese Mazemen.

But if you’re just going in for a filling snack and a drink, be sure to try Teigland’s indulgent fried karaage chicken with chile glaze and yuzu aioli ($10). Teigland grew up in Chicago before moving to Denver for high school. Teigland’s mother, who was a pastry chef, died eight years ago, shortly after he landed his first executive chef job.

The story behind the name of glo Noodle House is so touching, you might lose perspective on what a great restaurant it is. “Glo” is short for “Gloria,” the name of Chef/Owner Chris Teigland’s mom who was also a pastry chef. She encouraged him to spend time in the kitchen as a kid and to explore a variety of different cuisines.

Here’s what we had during our visit to glo Noodle House.

Authentic yet playful food and immaculate vibes at Glo Noodle House. And in June 2020, the trio of partners opened Birdhouse in downtown Erie, which serves tacos, ramen and rum-based cocktails, at 526 Briggs St. The couple partnered with local restaurant group Rearview Mirror Concepts and BV Builders to revamp Community at 206 S. “I thought my mother was the only one who understood my passion until I met Ari,” Teigland said. Before talking about the end of the meal, a few words about the restrooms. They’re extremely clever and spacious, adding some entertainment to doing what needs to be done.

The restaurant, opening next Thursday, will serve small classic Japanese dishes, such as scallop skewers with dashi butter and lemon, bok choy with anchovy vinaigrette, and steak tataki. Ramen entrees include misu bacon and lemon chicken shio. There will also be a large wine and sake menu, and some Japanese cocktails, like a margarita with mandarin liqueur. The location in a run of the mill strip mall belies the cool interior at this spot named for Chef/owner Chris Teigland's mother. Inside, dark charcoal and dark wood are offset by pops of bright colors, while overhead, vibrant lanterns of different colors and sizes draw attention.

Those of us who have been in Denver for decades think of the area as something very special, full of happy memories and part of town that was a real destination. The addition of glo Noodle House to the neighborhood continues that special feeling with a great backstory and delicious menu. But a year later, they received an offer to become partners of a comfort food restaurant in Lafayette called Community. The menu is pared down to essentials – items full of flavor and intention, done carefully and done right.

The kitchen delivers serious flavor on their noodle/ramen-based menu. Kick off with a sweet and savory skewer of marinated tofu skewer served with a miso peach jam and an almond and sesame candy crumble. Ramen options run the gamut from miso bacon and brothless versions to the death wish designed for spice hounds who want the heat without sacrificing flavor. Sweets worth saving room for include the sweet crispy rice cake with smoked caramel and kasu-lime ice cream. My husband toyed between the other options of Ramen like the Deathwish ($18) (amped up with a chili-pork broth and chili flakes), the Shrimp & Pork Tantanmen ($19) with chili paste, sesame soy milk, ground pork, and shrimp. Or the Prime Rib Shoyu ($18) with seared meat and marinated mushrooms.

He settled on the Lemon Chicken Shio ($16) though, in chicken broth with crispy lemon glazed chicken, onsen egg, bean sprouts, green onion, chili jam and crispy shallot. He, too, had to take some to-go, so full of noodles was his bowl. Glo was a pastry chef who put Chris to work in the kitchen as a kid.
